Abstract

The tavern gastronomy reflects several cultural symbolic markers, allowing intangible heritage and culinary tastes to be kept alive. Taverns are spaces of innovation (creativity) and permanence (traditions), where socialization modes, cultural transmission and storytelling are increasingly appreciated by tourists. A "triangulation" of three sources (cookbooks) was used as methodology, aiming to list the most authentic and emblematic dishes of the Alentejo gastronomy. Municipalities and tourism entities must cherish the tavern concept, supporting the safeguarding and preservation of these spaces and cultures and also the territory development.
